Did you ever think that chicken breast was boring and meant only for shnitzel? I give you proof its not! Chicken breast straight from the oven with onions, lemon and garlic. The chicken gets a lot of wonderful tastes and stays moist and juicy and super delicious!

Ingredients
- 1 lb Chicken Breast
- 2 Tablespoons Olive Oil
- 2 Large Onions
- Full head - at least 12 cloves Garlic
- You can use white win or any chicken stock substitute Chicken Stock
- From 2 lemons Lemon Juice
- 1 Full teaspoon Oregano
- A small bit Thyme
- 1 Teaspoon Crushed coriander seeds
- As Needed Salt
- As Needed Ground Black Pepper
Instructions
- Clean the chicken from any left over bones, feathers or fat
- Generously pepper and salt the pieces from both sides
- Peel the garlic and separate the cloves - with the help of a knife blade or any other contraption you may have - lightly squash each clove
- Slice the onion into 1/2cm thick slices
- In a steel pan - heat up the oil
- Heat the oven up to 356F
- When the oil in the pan is hot - place the chicken inside and fry for 1/2 - 1 minute on both sides until the chicken becomes white and begins to brown a bit on both sides - then take it out to a plate
- Add the onion, garlic cloves and a lot of salt and pepper to the pan whilst mixing for about 5 minutes until the onion softens
- Add the chicken stock and straight away begin to mix right from the bottom with the help of a wooden spoon. Make an effort to scrape all the great tastes from the bottom of the pan
- Now bring back the chicken, cover the dish and place in the oven for 25 minutes
- After 25 minutes, mix all the juices with the spices and add to the pan
- Mix it up and cook for another 5 minutes
- Ready! sit back and enjoy these amazing tastes!
- Serve with white rice and a nice salad.
