The following recipe is one of the flagship snacks from my grandma. This snack is prepared once a year – For the Purim feast. This is because it is delicious and also due to the fact it is somewhat of a calorie bomb. This snack is of course the highlight of the Purim desserts and despite the simple appearance - this is a real delicacy - crispy, sweet and light. The recipe is easy to make, but takes some time - so feel free to prepare other things simultaneously. The recipe is designed for a large number of guests – fitting for the feast of Purim – For a smaller group, use half the quantities of oil, water and flour. Also – this crunchy snack keeps well for several days (if it is kept in a closed box) so that you can prepare in advance if there is no time at Purim...

Ingredients

  • 1 Cup Canola Oil
  • 1 Cup Water
  • 3 1/2 Cups Flour
  • A pinch Salt
  • Plenty Sugar
  • For deep frying! Canola Oil
  • To flour the working space! Flour

Instructions

  • Put the oil in a bowl with water and a pinch of salt.
  • Pour in the flour slowly - stirring with a whisk.
  • Place flour in slowly – until there is a smooth unified mix – wet is ok, just not sticky!
  • Place in plastic wrap - refrigerate for half an hour - an hour.
  • Remove from the refrigerator and sprinkle flour on the surface.
  • Roll out the dough very thinly! (Note - the dough should not look beautiful or aesthetically pleasing - it should be thin!)
  • Cut it into squares, shapes, or whatever you want.
  • Make in the center of each piece a groove with a knife - to prevent swelling in oil.
  • Place in boiling oil a bunch at a time (not 5-6 more like 15 at a time!)
  • Then transfer to paper towels.
  • Transfer to a box - Pour sugar generously - Close the box and shake gently.
  • There you have it!
  • Now hide it until the guests come!
